Caldo gallego or simply caldo , literally means Galician broth. It is a traditional soup of Galicia very similar to Caldo Verde which is traditional in Portugal.
The ingredients of this soup are cabbage, collard greens, rapini (broccoli rabe), turnip greens, potatoes, white beans and may also contain chorizo ham or bacon.
It is served hot as a starter, often as part of lunch and sometimes dinner. Traditionally it is usually served in earthen bowls.
